The Ovale di Sorrento
Limoncello Di Capri is made exclusively with the Ovale di Sorrento, a superior lemon with a P.G.I. (Protected geographical indication) certification that guarantees its authenticity. Its aroma, balance, and richness of essential oils make this unique citrus fruit ideal for producing Limoncello Di Capri. The Ovale di Sorrento is endemic of the area since the 16th century, and the first crops date to the 17th century, with evidence found in sales acts, paintings, and literary and botanical treatises. The Ovale is a medium/large-sized and oval-shaped fruit with an aromatic yellow peel and a particularly juicy, tart pulp.
It’s grown and cared for by knowledgeable local farmers and sheltered in the shadow of «pagliarelle». These are traditional pergolas made by local growers using chestnut wood and protection nets to cover the lemon trees underneath and shelter them from cold and wind. This traditional practice creates a micro-climate within the grove, slowing-down the fruit-ripening process and giving the Ovale di Sorrento time to develop its unique aroma and taste. P.G.I. Sorrento Lemons used to produce Limoncello Di Capri are sourced directly from the farmers, after a thorough selection during the harvest. A further selection occurs in the factory during the peeling process to choose the best peels that will be infused in alcohol.

It’s a symbol of Italian excellence known and loved all over the world. Limoncello Di Capri has an everlasting bond with its territory because it is made exclusively with P.G.I. (Protected Geographical Indication) Sorrento Lemon peels, rich in essential oils that give body and flavour to the product.
Vincenza Canale and The Mariantonia Hotel
The original recipe
Limoncello Di Capri was born on the island of Capri, a place of unique natural beauty that discovered a vocation for the art of hospitality at the beginning of the 19th century. In the early 20th century Vincenza Canale, the trailblazing host, and landlady of the famous Mariantonia hotel started offering homemade lemon liqueur to her guests. Celebrities and regular visitors alike used to gather at sunset to toast with her special limonillo, the ancient Caprese dialect word for “limoncello”, a name that was first patented by Limoncello Di Capri. The original recipe created by Vincenza Canale is still used to this day. Limoncello Di Capri is made exclusively with P.G.I. Sorrento Lemons following an artisanal method respectful of the traditions and the flavours of the island of Capri.
Ovale di Sorrento
The Ovale di Sorrento is a superior lemon with a P.G.I. certification (Protected Geographical Indication) that guarantees its authenticity and uniqueness. Unlike all other lemons, the Ovale is a medium/large-sized and oval-shaped fruit with an aromatic yellow peel and a particularly juicy, tart pulp. Grown in our “giardini” following traditional practices until perfectly ripe, Sorrento lemon is the star ingredient that makes our Limoncello Di Capri so special.

P.G.I. Sorrento Lemons
Limoncello Di Capri is made exclusively with the best P.G.I. (Protected Geographical Indication) Sorrento Lemons. Their aroma, taste, balance between citric tartness and sweetness, and richness of essential oils, make these unique citrus fruits ideal for limoncello.
Peel
In order to guarantee the right amount of essential oils and the perfect balance between the tart nuances and the sweet notes of Limoncello Di Capri, the minimum quantity of peels must equal to at least 250 grams of whole fruits for every litre of liqueur.
100% Natural
Limoncello Di Capri is 100% natural, without artificial colourings or flavourings, preservatives or stabilisers.
Terroir
The lemon groves lie on the slopes of the Sorrento peninsula and the island of Capri, descending towards the sea. Thanks to the mild climate and volcanic clay soil, these lands give great tasting produce.

The alcohol by volume content of the liqueur must be at least 30%.

Short supply chain
The main benefits are minimising spoiling and maximising the freshness of the finished product. Limoncello Di Capri has implemented a vertical integration strategy, monitoring the supply chain from start to finish, from the lemons all the way to the final product. We have rigorous criteria for selecting our suppliers, such as their presence on the P.G.I. (Protected Geographical Indication) registry and the scrutiny of the methods used for growing, trimming and harvesting.
The guidelines protecting P.G.I. Sorrento Lemons used for Limoncello Di Capri also regulate the processing area, which must be within the Sorrento peninsula and the island of Capri. Only liqueurs made in this area can claim the “P.G.I. Sorrento Lemon” denomination and use the official badge on the label. The European regulation No. 110/2008 recognises the Geographical Indication for the “Sorrento Lemon liqueur” and states that the production process must follow the strict rules of the protocol.

The BRCGS Food (British Retail Consortium Global Standard for Food Safety) and IFS Food (International Food Standard) certifications ensure that the production of Limoncello Di Capri follows requirements of authenticity, quality, safety and legality to protect the consumers. Limoncello Di Capri has also obtained an ISO 9001:2015 certification for the quality of the production process and is Kosher certified. This means that its products comply with the dietary standards of the Jewish religion.

Thanks to the company policies towards sustainability at every stage of the supply chain and production process, Limoncello Di Capri has obtained the ISO 14001:2015 certification, which assesses its environmental performance and lists the necessary activities for continuous improvement. Sustainable Use of Natural Resources
We aim at a rational management of natural resources to limit consumption and reduce waste. From 2021 our energy is 100% green, sourced from renewable energy sources. We have reduced our water consumption year-on-year by 28% in 2021 and by 38% in 2020.
Upcyling Spent Peels
At the end of the production process, 100% of our spent peels are recycled and taken to a biogas facility near Salerno where they are turned into energy.
Environmental Risk Assessment
We carry out a rigorous risk assessment of soil, air and water contamination and we have implemented an emergency response system to prevent incidents from occurring.

We optimise the production process and minimise waste by choosing ingredients packed with recyclable packaging materials.

Our Fabbrica Trasparente, the «transparent factory”, was born out of a strong will to promote the territory and the culture of a high-quality artisanal product. Although Limoncello is a popular liqueur in Italy and abroad, the complexity and array of competences required to produce a high-quality product go often unnoticed. Our production process is so meticulous and carried on with such passion that it’s worth knowing about. The knowledge of our local growers who still use ancient techniques respectful of nature and territory; the unique ability in selecting and harvesting the best lemons; the care in washing and peeling the precious peels rich in essential oils and the attention to all the other phases of the production, from infusion to mixing and bottling. An extraordinary and charming process that makes a 100% natural product, still produced according to the original recipe of the Island of Capri. A craftsmanship that deserves to be unearthed, promoted, and discovered to be fully appreciated.
